This Pork Feet And Moro-Locrio De Guandules Got Me Thinking...

Moro-Locrio De Guandules by Jessika M.G.P.

In this past days, I made this Moro-Locrio de Guandules and pork feet with a remaining pork feet that I had on my fridge from a dinner I made at some point in the past weeks. I needed to use those guandules as soon as possible as well, so I came up with the idea to cook them in the same pot.

I used the soup broth from the remaining pork feet soup (I refuse to use the word Leftover. Not everything is a leftover! Just the food that's left on the plate after eating is leftovers, ok?! HYPER CONSUMERISM CANNOT BE KEEPING THE DEGRADATION OF CULTURE!) as the water and seasoning for the moro-locrio and placed the pork feet on top of the rice right before letting the moro-locrio cook in low heat. That way the pork feet would get reheated with the steam without loosing flavor.

But making this dish was the drop that poured out the glass of an accumulation of little things partially related. Things like finding fertilized eggs while cracking them for my usual breakfast and concluding that the only thing I could do was to bury the little thing (not bigger than a grain of rice) and pray to guide its soul back to Earth's heart to RIP, watching restaurant cooking videos and witnessing how seafood is cooked while it's still alive after having been vegan for 5 years straight not too long ago, watching a video of how pig heads, blood and internal organs are usually cooked and processed in restaurants that specializes on that in S.Korea while trying to desensitize myself and get over the food trauma that has been hunting me for ten years already, worrying all of the sudden of the internet's reaction from seeing someone cooking pork feet while taking this photos... At the end, those things got me thinking:

Life is in everything we eat.

It sounds so obvious that you probably almost thought that I'm dumb. But think about it beyond plain sight for a minute. Humanity has been rejecting, "ignoring" and disrespecting Life for millennia! As far was we know, of course. I can't get myself to fully engage with anything I was forced to believe by society.

First of all, why would society create a system where just the ones that get academically fully indoctrinated are the ones with political permission to have credibility? If I say something that would completely change everything as we know it, but without a mayor on it... is like I didn't say anything to The System. In fact, if there would be a mayor of it and I would have it, but what I'd say wouldn't fit the System's interests... in that case... I would be a menace to deal with to The System. Whatever...

But back to the road... Can we take a minute to appreciate how poetical this photo is? By the time I got to eat It, it was completely cold from spending like 10 minutes finding a good angle. That dish has more photos than I have ever taken of myself in my whole 26 years of experiencing Life. I noticed recently how popular chicken has gotten in pop culture. And I'm gonna say pop culture 'cause, believe or not, there's other cultures out there. And the way chicken has gotten popular... is by mostly just using the most tasteless part of the chicken, the chicken breast. Just because it's boneless, convenient, versatile and easy to eat.

Almost all chicken recipes out there are just using chicken breast, thighs, wings and drumsticks. When people create recipes, they only use standardized parts of animals (and yeah! I'm gonna use the word People, 'cause there's supposed to be humans behind everything that happens in the world!). By the time that steak gets to the table, it doesn't even looks like it came from a cow. Because of this, we've been "living" our lives with a deeply rooted un awareness of Life. The irony, right?! Living without knowing what Life is.

Eating synthetic flavors, tasteless foods, non diversified diets and developing a cuisine that praises animal cruelty, anti natural concepts and portraits food as something to be disrespected, sexualized and degraded. Completely ignoring and forgetting the fact that food was once alive and it is still alive, but in a different way ('cause the moment we eat it, it turns into part of us.) has had a secondary effect on the psique of society: 

Everything has to be the same or similar enough to be pleasant to people. Beauty standards, personalities, clothes, ideology, relationships, expectations, businesses, The Market, professional lives and so on. Everything being the same and everyone living the same. Even Privacy has turn into a public domain! Taking away the ownership of each individual's life and existence, replacing it with a program, a routine, a schedule, a blueprint...

Is not that AI and corruption has been taking over the world by themselves, people's minds have gotten dull enough to welcome and accept the (furtive) takeover of AI and corruption. A collective that doesn't has any idea how pork feet or any other uncommon parts of farmed animals taste like, has eaten the same cuts of meat their whole life and not bothered to try and taste new things wouldn't easily be able to see the negative and positive potential possibilities and outcomes of something ahead before it already happens.

The moment we see the face of the animal that we're actually eating, the internal organs that used to digest food and pump blood, have thoughts and emotions and should've experience the good life, the real life... we freak out and think it's disgusting. The moment we see that someone has their own personality, their own thoughts, their own ideas, their own preferences, their own worries, their own emotions, their own hardships... When we see that Life is getting "too" real... we detach, freak out and run away 'cause we don't know how to face and deal with real things. We've been eating tasteless chicken breast our whole lives. How would we know how to enjoy the most flavorful and nutritional parts of the chicken we've been ignoring this whole time?

About dominican food: when we cook rice with legumes all in one pot with seasonings, we call it Moro. When we cook rice with meat all in one pot with seasonings, we call it Locrio. Since I did a mix of both, I refer to this dish as a Moro-Locrio. 

Flavor wise... this dish was pretty good. Moro De Guandules is a traditional dish here in Dominican Republic. So it wasn't anything new to me. I've had better moros de guandules, I've had worse moros de guandules. But it was unique on its own. A recipe that came from unique circumstances.

I have been spoiled by someone that listens to whatever I always have in my mind to say for years °|♡~♡'|° and now the only way that I can write is just being myself... I TRIED! OK?! I TRIED TO BE NORMAL!! BUT THAT ONLY LASTED ME THE FIRST TWO PAGES OF THIS DIARY!! I can't help it!

I sincerely apologize if I offended anyone. It was never the intention. Writers have to write and people has to think. Without writers writing, there's no people thinking. I'm not trying to please and entertain the public. If it gets to happen, it'll be naturally. And I'll be honored. But still... even then, I wouldn't be able to please and entertain everybody anyways. So let's always be kind and resilient, let's be human. I always want the best for the every single one of you! ♡
